Start your week by heading to Trader Joe’s this afternoon to pick up the infamous pumpkin batter mix. Last year my roommates and I would purchase a box a week (no joke). It is the perfect way to make pumpkin muffins or cake without having to purchase all the pumpkin ingredients to make them from scratch. Instead of just making a regular old batch I decided to spruce up the recipe and add cinnamon coconut to the top of each muffin. Just the minor addition added a whole different dimension to the regular boxed pumpkin mix from Trader Joe’s. I can’t wait to pick up another to try another combination.
