The other day, while I was relaxing on the beach, I was asked the question, “If you could open up a booth at the Farmer’s Market what would it be”? My immediate response was a Fresh Popsicle Booth. There is something so appealing and refreshing about eating a Popsicle on a blistering hot day. Homemade, juicy, sweet, tart, ice cold popsicles & juice bars will definitely be a must have food item this summer. For this pink pop, I decided to blend some watermelon that I had in the fridge and then I poured the mixture into freezer molds. At the last minute, I also decided to throw in some fresh slices of strawberries and I added a splash of fresh orange juice. As the summer months get warmer and warmer, I’m excited to explore other flavors and become more creative with my Popsicle cravings. But for now, this fresh watermelon pop satisfies my sweet tooth on a hot summer night.
