Homemade Samoa Cookies

Tis’ the season for the little green vests. As a former Girl Scout, I remember spending many weekends during the month of March, camped out in front of Starbucks, the Grocery Store, or Blockbuster (when there used to be one) trying to sell hundreds of boxes of Cookies….. just to win the best prize in the little booklet they handed out. In all honesty I didn’t really do any of the selling it was mostly my mom selling the boxes. Back then I didn’t think much of Girl Scout cookies, it was just something that was required of me in order to earn another badge. However, as an adult I appreciate the work that these little Scouts put into their sales and I always look forward to the Cookie season. Since my years as a Girl Scout, my favorites have shifted … as a teen it was Tagalongs, in high school is was Thin Mints and currently I Love SAMOAS! I decided to make them from scratch because everything always tastes better when it’s homemade! I used this recipe and the cookies were delicious.
