On Tuesdays, my roommate and I usually head to Old Town for chips, salsa, guacamole and taco’s (shrimp tacos seen here). However, this week we decided to host our own Mexican food night. I have been extremely busy packing and getting together some last minute items forNew York. So, we invited our neighbors over for dinner to apologize for all the drilling and hammering that we have been doing since we moved in. I decided to make one of my favorite casseroles, that my grandma makes back home! It’s great for busy nights/weeks. I preparedthe entire casserole the night before and then I stuck it in the oven an hour before consumption. As it cooked, we enjoyed the scrumptious aroma throughout the house. I had some extra time on my hands so I continued my packing and stuffed over 50lbs in a suitcase that I will be lugging to N.Y. This casserole is topped with fresh avocados, crumbled tortilla chips, diced tomatoes, salsa and sour cream. Wednesday night leftovers were not an option because every morsel was devoured on Tuesday night!
