My usual go to “weekend” breakfast is either french toast or pancakes… something sweet and filled with carbs but this past weekend I woke up with a different craving… an egg sandwich. Since I didn’t feel like going to the store to fulfill my craving I made do with what we had and it was perfect: eggs, english muffin, bacon, spinach, and little bit of parmesan cheese. They were mini and delicious, we decided to give them a new name – Breakfast Sliders. So while my sister and her boyfriend cleaned up the mess from their party the night before my boyfriend and I watched while we enjoyed our sliders with an iced coffee.
