So I’m trying out this new thing called… “eating healthy” otherwise known as a diet. My boyfriend jokes with me because I say every Sunday night that I’ll start (my diet) Monday, and then every Monday night I’ll just start NEXT Monday. Well about 45 Monday’s have passed and I have yet to commit to a healthy food regimen. Â So I am serious about it this time …. bikini weather is right around the corner. Sometimes when I’m eating I tend to ask myself why WHOLE WHEAT pasta? and cardboard tasting bread? when the REAL stuff taste so much better.. but then I remember that the bikini’s in my closet will not be worn unless I stick to the “healthy food”. So if you can I would try and avoid this four letter word for AS LONG AS POSSIBLE especially if you like to eat like me. Â Anyways… as a replacement to the countless green salads I have been having to eat to shed those extra pounds, I decided to mix it up a bit with a cold Caprese salad. The fresh mozzarella and tomatoes soaked in olive oil and vinegar topped with ground pepper and basil was so refreshing.
